Quails have a higher body temperature compared to chickens, and this can contribute to a lower prevalence of Salmonella in quail eggs. The higher body temperature may make it more difficult for Salmonella bacteria to survive inside the quail and consequently in their eggs.
However, while the risk may be reduced, it's not entirely eliminated. It's still advisable to handle quail eggs with care, especially if they are intended to be consumed raw or lightly cooked. People with compromised immune systems, the elderly, pregnant women, and young children should be particularly cautious.
Proper food safety practices, such as ensuring the eggs are sourced from reputable suppliers, storing them correctly, and washing hands and surfaces that come into contact with raw eggs, remain important steps in minimizing the risk of Salmonella or other foodborne illnesses which is why you will see them at Michelin starred restaurants and on high end sushi menus. 12 quail eggs
1 tablespoon Homemade Mayonnaise or high-quality store-bought mayonnaise
Coarse salt and freshly ground pepper
1/4 teaspoon fresh lemon juice
Place quail eggs in a medium saucepan, and cover with several inches cold water. Cover, and bring to a boil
over high heat. Turn off heat, and let sit 2 minutes, stirring several times to ensure even cooking.
Transfer eggs to a bowl of ice water, and let cool completely, about 5 minutes. Remove eggs, 1 at a time,
and pat dry with paper towels.
Peel eggs, and halve lengthwise or chop the small end off with quail scissors. Remove yolks, and reserve whites.
Mash yolks with mayonnaise, and season with salt and pepper. Stir in lemon juice.
Use a syringe or icing dispenser to fill halves or bottoms.
Optional:
3 ounces salmon roe (russanddaughters.com)
3 ounces black caviar (russanddaughters.com)
24 Crostini
Fill each egg-white half with 1/4 teaspoon caviar. Place a dab of egg-yolk mixture on each crostini,
and place an egg half on top. Serve immediately.
